I cant believe is already Friday and I've been off this entire week! This is nuts!
Last night I hung out with a good friend of mine. It felt a little odd hanging out like it was a Saturday night on a Thursday! But fun nonetheless. :)
I wanted to share a recipe I made the other day which came out pretty delicious: Baked Sweet potato with Grilled Tilapia. The recipe is super simple to make! Plus, quick, delicious and healthy. What else can we ask for?!
1 medium sweet potato
dash seasoning and or/basil seasoning
1 medium size fresh tilapia (or any other type of fish you may have available)
Goya low-sodium Seasoning (pic below)
1 teaspoon coconut oil (pic below, optional) or non-stick cooking spray
Pre-heat oven to 370 degrees, cut up the sweet potato in slices, top with 1 teaspoon the coconut oil, add dash seasoning and basil seasoning on top. Cover the slices of sweet potato on alumminum foil and leave in oven for 20-30 minutes (remove once sweet potato is soft).
Squeeze 1/2 a lemon on the tilapia (or use a whole lemon is you are prepping two pieces) then proceed to add cut up pieces of garlic, red peppers, onions, and the goya seasoning. Mix it all well and place the tilapia in the fridge or put it aside for 20-30 minutes to absorb the flavor (if you are doing this dish the night before it would be even better to leave the tilapia in the fridge overnight as it will absorb even more flavor). Cover a skillet with the non-stick sprain and cook the tilapia. Quick Tip: start with a slow flame but after approx 10-15 minutes turn up the flame to a high (while you closely watch the fish so it doesnt burn). This helps the fish cook faster but most importantly it "browns" the sides enough that the fish wont break appart and it gives is a yummy flavor.
Now off to doing some stuff around the house and cooking dinner because I am starving.
